butternut squash risotto = happy tummies.
i know that it seems like i celebrate food all the time.
i like eating.
i like grocery shopping (though not on an empty stomach!).
i like reading cookbooks.
i like pictures of food.
i like cooking (but only when i don't have to).
so, i'm sorry for all the food posts, but i just have to post this amazing recipe for butternut squash risotto.
i don't have a pressure cooker so I followed some of the reviewers suggestions for using more (vegetable) broth and more time cooking.
it's not a great all-the-time recipe because who has fresh sage, aged gouda, butternut squash, or two cups of arugula routinely stocked in their fridge?
cooking show hosts. and people with more money than me.
but, if you're so tired of you're weekly staples (ahem, frozen veggie burgers) and want to try something new, delicious, and easy, i highly recommend this dish.
plus, it's nice to eat food that's fresh and homemade.
every once in a while.
